Tsuta Ramen

Michelin-starred ramen shop Tsuta opened their first overseas outpost in Singapore to much fanfare. The welcome wagon was apparently so crazed, queues were reportedly several hours long. As per new restaurant S.O.P., we waited till the fuss died down, before hitting it up for dinner.

It baffles me how Tsuta ever got a Michelin star, or how business is good enough to open another outlet in ulu-fied Tai Seng, but its pioneer Singapore branch was dreadfully underwhelming. The broth was exquisite, and the noodles were adequate, but the pork belly was terribly heavy on the "dirty-pork" stench, like the pig it was cut from had eaten a whole lotta crap and rolled around in a gross trashy landfill. Worse still, the char siew wasn't meltingly tender either.

Tbh, you're much better off walking a few hundred meters to Sanpoutei for a seriously good bowl of ramen instead.

The signature, the Shoyu Soba ($22.80) was scented with truffle paste, and loaded with 4 pieces of char siew, a soft-boiled egg, and one lone bamboo shoot. The best part about this bowl was the delicate soup base. Give a hard pass to the pork and alkaline bamboo shoot.

Ditto for the Shio Soba ($22.80) as well, the clear broth lightly flavoured with salt instead of truffle and soy. Lovely chicken soup base but horribly gamey pork.
