Pim Pam by FOC

The space previously tenanted by the dreadfully middling Bodega Y Tapas has been taken over by a new Spanish outfit. A Barcelona-styled tapas and wine bar, Pim Pam is an offshoot of the excellent FOC.

As expected, the food at Pim Pam was superb. There are a few dishes unique to Pim Pam that aren't available at its FOC sisters, so get those. Service was cheerful and attentive, and we particularly liked that our cherubic baby-faced chef made the effort to personally interact with us diners.

A must-try was the Pim Pam Trinxat ($16), a mash potato patty laced with savoy cabbage and pork nubbins, and sided by a fried egg, roasted pork belly and crispy kale. I love everything on this plate, on their own, and with each other.

Pim Pam offers 2 novel variations of their stellar Croquetas, one with sweet Crab ($5) topped with aioli and romesco, and a vegetarian one studded with Spinach & Pine Nuts ($4). Absolutely smashing.

The pan-fried Barramundi San Sebastian Style ($22) was meaty and luscious, paired with a couple of shrimp and confit potatoes, and drizzled with a lemony garlic emulsion spiked with dried chillis. Surprisingly citrusy, so it wasn't a flavour combination we were used to.

Pim Pam's paellas are served flat on a cast iron platter, so just about every grain gets the toasty crusty treatment. The Senyoret Paella ($30), imbued with a rich seafood stock, was generously dotted with squid and topped with a handful of scampi.
